Vegan Crab Cakes

Our family likes finding new fun things to eat. At a recent Vegan restaurant they made crab cakes with hears of palm. This intrigued us so much we had to try making some at home. My husband took the lead and searched the internet to find the right recipe. Also, because we live in a costal state (while not eating seafood) he wanted to find something we could eat and soak in the ocean vibes.

Ingredients:
1 can (25 oz) Hearts of Palm
3 T Vegan Mayo
1 – 2 t Old Bay Seasoning
1 t Black Pepper
1 t Salt
1 t Garlic Powder
8 Saltine or Ritz Crackers

Mash Hearts of Palm with your bare hands to give it the right texture. Crush crackers into small pieces. Combine all ingredients in bowl. Grab handfuls and create patties to fry in skillet. He used lots of oil to make it more of a deep fried crispiness.

Once created we served as a hamburger on bread with lettuce and tomatoes topped with a little tarter sauce.

It can also be served over roasted vegetables.

This recipe is still a work in process, because I’m determined to find a way to make it gluten free. I have ideas like GF pano, almond flour, ground oats, etc. There may be adjustments coming in the future.

Corn on the cob

Roasted vegetables - yellow potatoes, sweet potatoes, asparagus, mushrooms

Mixed greens and tomatoes

Homemade whole wheat bread

Watermelon
