Pear Cobbler

One morning, the kids wanted dessert dessert for breakfast and as usual and I wanted something healthy. On the counter were some pears were over ripe and in need of use. So, in my brilliance, I had an idea, but not exactly sure of the portions. So in a google search I combined my thoughts with several options found an the web and made an amazing new sweet treat for us to enjoy.

We actually made this for a breakfast dish instead of pop tarts or cinnamon rolls.

Fruit Filling
4 Pears, very ripe (you could probably use apples here too.)
1 t Cinnamon
1 t Corn Starch (optional)

Topping
8 Dates, Diced small
1/2 C Walnuts, Chopped
1 t Cinnamon
1 C Oats
Maple syrup (maybe just a little if you want the added sweetness.)

Mix the filling and add to a pie pan or casserole dish. Mix the topping and pour on top. If your fruit is not very juicy you may want to add some fruit juice or almond milk to help steam soften the fruit and oats.

Bake at 400 degrees for 25 minuets

Note: I keep a mixture of the topping (minus the maple syrup) in the cabinet to add to fruit salads or other fun things when inspired.
