Green Tomato Harvest & Fall Garden

Tomorrow the temperature is suppose to drop below freezing so harvesting all the tomatoes before the great freeze! We picked almost 2 bushels.

Our favorite way to enjoy green tomatoes fried of course.

In past years I have had success when we placed them in a paper bag in the back of the cupboard for about a month to slowly ripen. It takes time and darkness. I think the bag helped keep the “gas” confined also. This year we will put them all on shelves in the dungeon of a pantry we have in this house. They may not be the best texture or flavor compared to red off-the-vine. But, they can still be used in soups and sauces.
